Daniel’s Crepe Recipe
¾ cup milk
1 teaspoon vanilla extract
½ teaspoon almond extract (optional)
¾ cup water
½ cup granulated sugar
4 tablespoons butter, melted
½ teaspoon salt
3 eggs
1½ cups all-purpose flour
Toppings:
Jam or berries of your choice
¼ cup powdered sugar
Whipped cream
Chocolate, caramel sauce, or other sauce as desired (optional)
Step 1
In a large mixing bowl, whisk together the milk, extracts, water, granulated sugar, butter, salt, and the eggs. Gradually add in the flour, stirring to combine. Mix until smooth.
Step 2
Heat a lightly oiled griddle or frying pan over medium-high heat. Using a ¼-cup measuring cup for each crepe, ladle batter into the pan. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Step 3
Cook the crepe for 1–2 minutes, until the bottom is light brown. Loosen with a spatula, turn, and cook the other side.
Step 4
Fill the crepes with a smear of your favorite jam or fresh berries. Fold in the bottom, then the sides, then tuck in the top, like you’re folding a burrito. Sprinkle with powdered sugar and top with a dollop of whipped cream with the option to add more berries or a drizzle of chocolate, caramel, or some other kind of sauce.
